Italian
penne pesto salad

Recipe via Ardo Foods

Ingredients:

  • 2kg wholegrain penne
  • 500g cherry tomatoes
  • 300g sun-dried tomatoes
  • 30g garlic
  • 20g parsley
  • 50g basil
  • 80g grated Parmesan cheese
  • 50g Parmesan flakes
  • 80g pine nuts
  • 1.5 tbsp olive oil
  • Juice of ½ lemon
  • Pepper
  • Salt
  • 20 slices Parma ham
  • 125g rocket

Preparation:

  1. Roast the pine nuts in the pan.
  2. Blend together with the parmesan, half the garlic & parsley, basil and olive oil to make a smooth pesto.
  3. Season with salt and pepper and add the lemon zest.
  4. Marinate the cherry tomatoes with some olive oil, salt and pepper and the rest of the garlic & parsley.
  5. Bake in the oven at 180°C for 10 minutes and allow to cool.
  6. Dip the wholemeal penne briefly into boiling water or briefly heat it up in the steamer and allow to cool.
  7. Mix the pasta with the pesto and tomatoes.
  8. Finish off with some rocket, Parma ham and Parmesan flakes.

Fried Mozzarella Pearls With Arrabbiata

Recipe via Sysco Foods

Ingredients:

  • 230g ciliegine-sized mozzarella cheese
  • 230g Japanese panko bread crumbs
  • 2 fresh eggs
  • 230g plain flour
  • 6g coarse sea salt
  • 2g black coarse ground pepper
 

Arrabbiata sauce ingredients:

  • 2 small garlic cloves, peeled and crushed
  • 2 tbsp extra virgin olive oil
  • 1 red chilli, deseeded and finely chopped
  • 1 x 400g can chopped tomatoes
  • Fresh basil and grated Parmesan for garnishing

Preparation:

  1. Prepare Arrabbiata sauce*
  2. Season the flour and panko bread crumbs with salt and pepper.
  3. Set up a breading station with flour, egg wash, and dry panko. Double bread 5-8 individual ciliegine mozzarella balls, depending on the size.
  4. Fry until golden brown.
  5. Serve with arrabbiata sauce for dipping. Garnish with fresh basil and grated Parmesan.

*Arrabbiata sauce preparation:

Pour the oil into a saucepan and fry the garlic over a medium heat for 1 – 2 mins until fragrant, but not browned. Add the chilli, fry for another minute, then add the tomatoes along with 1 tsp salt and ½ tsp sugar. Stir well to combine the ingredients and simmer gently for 20 mins, stirring regularly. The sauce will thicken slowly as it cooks.
